Plant-based Eggs are coming

JUST is an American company that makes ‘egg’ from mung beans, turmeric and other vegetable ingredients. The company has just closed its first big deal with a fast food chain, the Canadian coffee chain Jim Hortons.
Vegetable egg sales are still limited, around $6 million a year according to the Plant Based Foods Association, but growing strongly in the slipstream of vegan meat substitutes.
With the advent of a plant-based egg replacement, a more plant-based diet will become easier for consumers to achieve. And the hospitality industry has new ways to prepare and promote many traditional dishes in a vegan way.
