‘Arc of Tastes’ Saves Rare Foods

Since 1996 the organization Slow Food has been building the International Arc of Taste, a database with almost 5,000 ingredients that are in danger of extinction. With this database they hope to promote the use of rare foods. The organisation also launches campaigns to raise awareness of dying foods. This spring, a campaign will lead to 3,000 farmers, school gardens and Slow Food organisations planting seeds from rare edible plants.
